A refreshing yet complex gin sour. Who knew your lawn weeds could be so delicious?
The impressive taproot of the humble dandelion (Taraxacum officinale) is an expert in penetrating poor and compacted soils to carry minerals and water up to the surrounding area, where it shares with other plants in its community (and indeed allows them to move in at all!).
This is the beginning of a richer and more diverse ecosystem, with the dandelion serving as community builder, city planner, and bricklayer – proving to us that a simple organism can have a big impact.
So too does the gin you choose have a big impact on the final cocktail. Something warm and spicy like Herbie Gin will create a more complex and interesting drink, while a citrus-forward one will give you a brighter and crisper libation.

Ulmus is the genus name of the elm trees. Since the early 20th century, the elms became increasingly rare in Europe due to fungal infection spread by bark beetles. All the large and old elms are gone now, but smaller trees are becoming common again, standing as a stalwart symbol of native flora regeneration and restorative efforts.
We aim to create flavour experiences that are visceral and serve as a gateway to engaging with nature, sustainability, and restorative ecology. Through the use of wild botanicals in artisanal products and cocktail experiences, we bridge the ancient and the modern, the strange and the familiar, creating a connection between you and your new favourite flavour.
