Vild med det is a social project focused on environmental education for people of all ages and backgrounds, where we take participants of all ages out in nature to immerse in and learn about the different Danish ecosystems.
In Denmark, the knowledge about wild plants has dwindled over time due to societal changes and urbanization. The project aims to provide an environment for learning the first steps on how to engage consciously and responsibly with the local ecosystem, empowering regenerative practices and rediscovering wild edible plants.
We take people out into immersion experiences where they can explore the identification and uses of wild botanicals, learning how to employ sustainable foraging techniques that leverage conservation practices for ecosystem support while employing ancient methods for the acquisition of seasonal, organic, and regional edibles with unique flavors.
By reviving this philosophy in Denmark, we restore the historical connections between people and land, raising awareness about wild and native species while maintaining and regenerating local ecosystems.
Through inclusive participation, we want to promote ecological literacy and fill the gaps in general environmental and natural knowledge. Instilling a deep appreciation for nature and biodiversity empowers individuals to make informed, sustainable choices in their daily consumption habits, as well as instilling a sense of responsibility for our local ecosystems.

The project activities aim to promote environmental responsibility and focused community actions, contributing to long-term prosperity. Through hands-on foraging experiences, participants develop personal connections with local ecosystems, fostering stewardship for biodiversity and instilling responsibility for natural ecosystems. Such connections enhance resilience in the local areas, leading to increased biodiversity and conservation.
Ulmus is the genus name of the elm trees. Since the early 20th century, the elms became increasingly rare in Europe due to fungal infection spread by bark beetles. All the large and old elms are gone now, but smaller trees are becoming common again, standing as a stalwart symbol of native flora regeneration and restorative efforts.
We aim to create flavour experiences that are visceral and serve as a gateway to engaging with nature, sustainability, and restorative ecology. Through the use of wild botanicals in artisanal products and cocktail experiences, we bridge the ancient and the modern, the strange and the familiar, creating a connection between you and your new favourite flavour.
