Raspberry season is upon us, so we foraged the wild variety (Rubus Idaeus), and turned them into a wild version of a classic gin sour: the Clover Club.
The Clover Club is a pre-prohibition cocktail, hailing from the turn of the 20th century. It was supposedly named after a gentlemen’s club that enjoyed this drink at their meetings in the bar of the Bellevue-Stratford Hotel, in Philadelphia where it was served.
Using fresh syrup really makes all the difference here – the wild raspberries bring an exquisite and vibrant flavour that is completely alive and miles ahead of store-bought syrups.
This is by far the best version of this drink I’ve ever had.

Ulmus is the genus name of the elm trees. Since the early 20th century, the elms became increasingly rare in Europe due to fungal infection spread by bark beetles. All the large and old elms are gone now, but smaller trees are becoming common again, standing as a stalwart symbol of native flora regeneration and restorative efforts.
