There are so many wonderful flavours in nature that are completely overlooked by modern agriculture, and sometimes the natural world might seem intimidating and daunting. Thats why we have expert foragers that take care of locating and identifying edible botanicals, with a special focus on plants that have been used historically.

Much of local botanical knowledge is now only preserved in the minds of our grandparents and specialized botanists. We want to show the world how wonderful wild edibles can be, and make these flavours available and accessible once again, connecting people to the bounty of the Nordic landscape.

We encourage people to learn more about the wild plants present in your region. It’s important to identify plants correctly, only take what you need, and leave enough for regeneration. We offer guided tours (free and private) all over Denmark with expert foragers that can guide you in your first steps.

The organic (ØKO) certification is only granted to the agrobusiness that follows the specific regulations defines by EU. In the case of commercial products such as food and beverage, the label extends to those who source and procure all their ingredients from ØKO certified businesses. We do not own and farm the land, and we do not buy botanicals from any specific vendor – we forage the plants in pristine natural areas instead. We believe that handpicking the flowers and berries is even better than the certification! It is as natural as it gets and with less impact to the environment.

For ingredients of commercial origin present in our products such as sugar and neutral grain spirit, we procure from local Danish producers (most of them ØKO certified). However, because of the wild component, our products cannot receive the label.

Beverages made with wild plants are a more sustainable choice compared to conventionally produced drinks. Responsible sourcing and production are the key for that, but we also listed some main aspects below:

Reduced Land Use and Cultivation: Unlike conventionally farmed crops, wild plants don’t require dedicated land, tilling, irrigation, chemical fertilizers or pesticides. This drastically reduces pressure on the environment, lowers water consumption, and help to preserve natural areas that are vulnerable of becoming farmland.

Biodiversity Support: Foraging for wild plants, when done responsibly, can promote biodiversity both for native plants as well as insects and pollinators. Using seasonal plants ensures their natural abundance is maintained. Selective harvesting can encourage the growth of certain species, reduce populations of invasive plants, and maintain a healthy ecosystem. Natural land management are a collection of practices that have been implemented by indigenous communities all over the world for millennia, ensuring that people and nature coexist in harmony.

Reduces Carbon Footprint: Wild plants are sourced locally, reducing transportation emissions associated with bringing ingredients across the globe. Furthermore, waste reduction measures are applied in all steps of production since we are able to use the whole plant. The production of wild beverages requires less processing compared to conventional products, which often involve multiple stages of manufacturing and refining.
